Ingredients:

· Celtuce stem 500 g
· Red bell pepper 1/4
· Rice vinegar 1 tbsp
· Light soy sauce 1 tsp
· Sesame oil 1 tsp
· Toasted white sesame 1 tsp
· Sugar 1/2 tsp (optional)
· Salt a pinch

Instructions:

1. Prepare the celtuce
Remove the thick peel and fibrous layer, rinse, and cut into fine even strips.

2. Salt briefly
Toss with a pinch of salt, rest for 8 minutes, and drain.

3. Add color
Cut the bell pepper into fine strips and combine with the celtuce.

4. Make the dressing
Mix rice vinegar, soy sauce, sesame oil, and optional sugar.

5. Toss
Pour over the vegetables and toss quickly.

6. Serve
Sprinkle with sesame and chill for 10 minutes if desired.
