Ingredients:

· Shiitake mushrooms 4–5 (diced)

· Vermicelli noodles 50g (soaked and cut)
· Light soy sauce 1 tablespoon
· Sesame oil 1 teaspoon
· Salt 1/2 teaspoon
· Vegetable oil 1 tablespoon

Instructions:
1.Prepare the Dough
Dissolve yeast in warm water, then mix with flour. Knead into a smooth dough, cover with a damp cloth, and let rise for about 1 hour until doubled in size.

2.Prepare the Filling
Soak vermicelli noodles until soft and cut into small pieces. Dice mushrooms and chop greens finely.

3.Cook the Filling
Heat oil in a pan. Stir-fry mushrooms until fragrant, then add greens and vermicelli. Season with soy sauce, salt, and sesame oil. Stir well and let cool.

4.Wrap the Buns
Knead the risen dough again and divide into small portions. Roll each into a round wrapper (thicker in the middle). Add filling and seal tightly.

5.Second Proofing
Place buns on parchment paper and let them rest for 15–20 minutes until slightly puffy.

6.Steam and Serve
Bring water to a boil, steam the buns for 12–15 minutes, then turn off the heat and rest for 2 minutes before uncovering.
