Stir-Fried Bok Choy with Shiitake Mushrooms

Dish Highlights:

Shiitake mushrooms are rich in nutrients and have a fragrant taste. Bok choy is high in dietary fiber, aiding digestion.

Ingredients:

400g Bok choy,50-100g rehydrated shiitake mushrooms.

Seasonings:

5g minced ginger,2g salt, A pinch of sugar,25g vegetable oil,A small amount of cornstarch slurry。

Cooking Instructions:

  1. Soak dried shiitake mushrooms in warm water until soft. Reserve the soaking water for later use. Wash the bok choy and cut it into bite-sized pieces.
  2. Heat oil in a pan until moderately hot, then sauté the minced ginger until fragrant.
  3. Add the shiitake mushrooms and stir-fry for 30 seconds, then add the bok choy and stir-fry for another 30 seconds.
  4. Pour in the reserved mushroom soaking water, add salt and sugar. Stir-fry until the bok choy changes color and is cooked through.
  5. Finally, add a small amount of cornstarch slurry to thicken the sauce. Remove from heat and serve.
