Ingredients:
· String beans 300g (trimmed and cut into sections)
· Dried chili peppers 3–5 (cut into pieces)
· Ginger 1 teaspoon (minced)
· Minced mushrooms or plant-based mince 50g (optional)
· Light soy sauce 1 tablespoon
· Salt 1/2 teaspoon
· Sugar 1/3 teaspoon
· Vegetable oil 2 tablespoons

Instructions:
1. Prepare the Beans
Trim the ends of the string beans, wash, and cut into 5cm pieces. Drain well.

2. Blanch the Beans
Bring a pot of water to a boil, add the beans, and blanch for 2 minutes. Drain and rinse in cold water to retain color.

3. Dry-Fry the Beans
Heat vegetable oil in a wok, add the beans, and stir-fry over medium heat for 6–8 minutes until slightly wrinkled and fragrant. Remove and set aside.

4. Sauté the Aromatics
Leave a little oil in the wok. Add minced ginger and dried chili peppers, stir-fry until fragrant. Add minced mushrooms or plant-based mince and mix well.

5. Season and Combine
Add soy sauce, salt, and sugar. Return the fried beans to the wok and stir-fry over high heat for 2 minutes until evenly coated.

6. Serve and Enjoy
Once aromatic and lightly charred, transfer to a plate and serve hot.
