Ingredients:
· Eggplants – 2 (about 400g)
· Green and red peppers – 1/2 each
· Minced ginger – 1 tsp
· Light soy sauce – 1 tbsp
· Dark soy sauce – 1 tsp
· Sugar – 1 tsp
· Vegetable oil – 2 tbsp
· Water – appropriate amount
Instructions:
1. Preparation
Wash and cut eggplants into chunks, cut peppers into pieces.
2. Frying
Heat oil in a wok, fry eggplant pieces over low heat until golden.
3. Seasoning
Add minced ginger, then light soy sauce, dark soy sauce, and sugar. Stir well.
4. Braising
Add a little water, cover, and simmer for 3-5 minutes to let the eggplant absorb the sauce.
5. Finishing
Add peppers, stir-fry until just cooked, and reduce the sauce until thick.
Tip:
Do not use too much oil when frying eggplant to avoid greasiness.
