Ingredients:
· Potatoes 2 (peeled and thinly sliced)
· Green bell pepper 1 (sliced)
· Red bell pepper 1 (sliced)
· Shiitake mushrooms 3 (sliced)
· Vegetable oil 2 tablespoons
· Light soy sauce 1 tablespoon
· Dark soy sauce 1/2 tablespoon
· White sesame seeds a pinch
· Salt to taste
· Water as needed (for blanching)

Instructions:

  1. Prepare the Ingredients
    Peel and slice the potatoes thinly, rinse twice to remove starch, and soak in water for 5 minutes. Slice the peppers and mushrooms, then set aside.
  2. Blanch the Potatoes
    Bring water to a boil with a pinch of salt. Add potato slices and blanch for 1 minute. Drain well and pat dry.
  3. Sauté the Vegetables
    Heat vegetable oil in a wok. Add the sliced mushrooms and sauté over low heat until fragrant. Then add bell peppers and stir-fry briefly.
  4. Add the Potatoes
    Increase to high heat and add the potato slices. Stir-fry quickly until slightly golden and crisp on the edges.
  5. Season the Dish
    Add light soy sauce, dark soy sauce, and salt. Stir-fry for another 2 minutes until evenly coated.
  6. Serve and Garnish
    Sprinkle white sesame seeds over the dish and serve hot, preferably in a sizzling pot for best aroma.
