Ingredients:
· Shepherd’s purse 200g (washed and finely chopped)
· Tofu 200g (pressed and mashed)
· Shiitake mushrooms 2 (minced, optional)
· Light soy sauce 1 tablespoon
· Sesame oil 1 teaspoon
· Salt 1/2 teaspoon
· Dumpling wrappers about 30 pieces
· Vegetable oil a little

Instructions:

  1. Prepare the Ingredients
    Blanch shepherd’s purse for 30 seconds, drain, squeeze out excess water, and chop finely. Press tofu to remove moisture and mash it. Mince the mushrooms.
  2. Make the Filling
    In a large bowl, mix shepherd’s purse, tofu, and mushrooms. Add soy sauce, sesame oil, and salt. Stir well until evenly combined.
  3. Wrap the Dumplings
    Place a small spoonful of filling in the center of each wrapper. Fold and seal the edges tightly into a half-moon or pouch shape.
  4. Cook the Dumplings
    Bring a pot of water to a boil. Gently drop in the dumplings and stir to prevent sticking. When they float to the surface, cook for another 2 minutes.
  5. Prepare the Dipping Sauce
    Mix soy sauce, vinegar, and sesame oil for dipping. Add chili oil or mustard if desired.
  6. Serve and Enjoy
    Transfer dumplings to a plate and serve hot with the dipping sauce. The texture is tender, the aroma mild and clean.
