Ingredients:
· Shepherd’s purse 200g (washed and finely chopped)
· Tofu 200g (pressed and mashed)
· Shiitake mushrooms 2 (minced, optional)
· Light soy sauce 1 tablespoon
· Sesame oil 1 teaspoon
· Salt 1/2 teaspoon
· Dumpling wrappers about 30 pieces
· Vegetable oil a little
Instructions:
- Prepare the Ingredients
Blanch shepherd’s purse for 30 seconds, drain, squeeze out excess water, and chop finely. Press tofu to remove moisture and mash it. Mince the mushrooms. - Make the Filling
In a large bowl, mix shepherd’s purse, tofu, and mushrooms. Add soy sauce, sesame oil, and salt. Stir well until evenly combined. - Wrap the Dumplings
Place a small spoonful of filling in the center of each wrapper. Fold and seal the edges tightly into a half-moon or pouch shape. - Cook the Dumplings
Bring a pot of water to a boil. Gently drop in the dumplings and stir to prevent sticking. When they float to the surface, cook for another 2 minutes. - Prepare the Dipping Sauce
Mix soy sauce, vinegar, and sesame oil for dipping. Add chili oil or mustard if desired. - Serve and Enjoy
Transfer dumplings to a plate and serve hot with the dipping sauce. The texture is tender, the aroma mild and clean.
